Alida's Super Light Chocolate Wee Cakes
Ingredients for Cupcakes:
1.5 cups flour
1 cup sugar (or less is fine too)
4 tablespoons powdered cocoa
1 teaspoon baking soda
1 cup cold water
6 tablespoons oil
1 teaspoon vanilla
1 tablespoon white vinegar
Topping:
Top with Cool Whip and sliced strawberries mixed with a light coating of
sugar for delicious dessert!
Mix ingredients in a large bowl. Spray with Pam then fill cups of a mini
muffin tin about 2/3 full with batter. Bake at 325 degrees until a
toothpick comes out clean, about 10-15 minutes. Timing varies greatly
depending on the size of your muffin tin so watch carefully. This recipe
can also be made into a cake using a 8"x8" square pan.
These cupcakes are quite wonderful because they are
light and not too sweet.
