Artichoke Alley Chunky Chiloosa
Ingredients:
2 cans artichokes, cut into bite sized chunks
Dollop roasted bottled garlic [optional]
Handful chopped fresh parsley
Handful chopped fresh cilantro [optional]
1/2 bunch scallions chopped
1/2 white onion chopped fine
Large chunk feta cheese chopped medium
1/3 cup olive oil
1/3 cup white vinegar
Touch of basil, paprika or other spices according to your preference
Directions:
Mix together and refrigerate for at least two hours. Keeps well. A Real
Bite!
Can be served with crackers and toothpicks.
