Semi-Formal Black Tie Quickie
Pasta Salad
At a recent catering job my client asked for three kinds of cold salad. I
smiled confidently, and didn't mention anything about never having made
any pasta salad. I let my imagination pop this one out randomly. People go
crazy over it!
Boil to Al Dente:
1 16 OZ box quality plain white bow tie pasta
[don't use the multicolored, it's not aesthetically pleasing post cooking,
and doesn't hold it's physical integrity; also don't use the bulk stuff]
Chop:
1 block Cabot feta cheese chopped fine [or more if you like it 'specially]
1 bunch scallions oriental cut [at an angle]
1 each green & red peppers sliced into very thin strips
1 medium white onion minced
Add:
1/2 cup fresh grated parmesan cheese
1 bottle 16 ounces Caesar salad dressing
Handful dried parsley
Toss it all together.
YIELD: a huge bowl.
VARIATIONS/NOTES: Add 1 bunch fresh chopped cilantro if you like it.
