Dark Chocolate & Caramel Brownie Bytes

These are similar to the Betty Crocker Turtle style brownies, but they are dark chocolate, have a higher yummy caramel to brownie ratio, and don't have pecans.

 

Bring to room temperature (will be very soft)

1 Concord Foods Caramel Apple Kit 

These can always be found around Halloween, and other times as well in the produce section of your supermarket. Do not use regular caramels or other brands of caramel apple kids as they mess up the recipe (trust me, I wrecked a few batches trying it out). One kit will make about two batches of brownies depending on how much caramel you use. There are two types of kits, the bin of caramel that you dip the apples in, and the caramel wraps what you wrap around the apples. Either one works fine. Cut the caramel into chunks about the size of a sugar cube, one for each brownie.

 

Mix as Directed

1 Betty Crocker Dark Chocolate brownie mix (I think Betty Crocker makes the best mixes)

 

Spray Pam on a Mini Muffin Tin

Fill with dark brownie batter about 2/3 full. Drop one cube of caramel into each brownie and bake. They usually only take about 20 minutes to bake. Serve with cold milk. Tasty cold, but even better just out of the oven or slightly microwaved so the caramel is melty. Careful not to over microwave or they will turn into little rocks.
