Fill-Your-Own Mini Calzones

This recipe makes eight mini calzones, each about the size of one slice of pizza dough wise. I included three types of fillings, but feel free to improvise! It’s all about filling them with your favorite stuff. This recipe is particularly good for parties and people who have strong feelings about certain fillings.

Ingredients
1 package ready made refrigerated pizza dough (enough for one pizza)

Filling #1: Get my Goat!
Goat Cheese
Kraft Shredded Five Cheese Mix (just a sprinkling over the goat cheese)
Sauteed onions (cut in ¼ rings and sauté on a very high heat using Pam)
Salt & Pepper
Other seasonings if you particularly like them such as Paprika, Hot sauce etc.

Filling #2 Portobella Road
Sliced & sauteed Portobello Mushrooms (don’t overcook as they’ll cook a little in the oven too)
Kraft Shredded Five Cheese Mix
Salt & Pepper
Other seasonings if you particularly like them such as Paprika, Hot sauce etc.

Filling #3 Curry your Favor
This is a chicken curry filling that is a separate recipe here. Note that these are harder to make because the filling is wet and tends to muck up the dough and make it not stick together well. But they are yummy!

Directions
Keep dough in refrigerator until you’re ready to work with it

Preheat oven to 450 degrees
Spray cookie sheet with Pam
Mix fillings to your taste
Cut dough into eight equal pieces and place on a greased plate
Stretch out each piece into a little mini pizza
Place filling in the center, and close the edges up tightly. Put the calzone down on the cookie sheet with the seem down (it helps keep the fillings inside)
Bake about 15 minutes or until toasty brown on top
Serve hot
