Snap, Crackle Cheesy Crispies

Bring
to room temperature
1
cup butter, softened
Add in a large bowl
3 cups shredded Italian cheese mix (Mozzarella, parmesan etc.) Kraft
version of this is good.
2 cups all-purpose flour
Handful fresh or dried chives
1/2 teaspoon salt
2 cups Rice Crispies (last and gently)
Divide the mixture into four parts, and roll into 6 inch long logs. Wrap
in plastic wrap, and refrigerate until firm, about 1 hour.
Preheat the oven to 325 degrees. Unwrap the cheese logs, and gently
slice into 1/4 inch thick rounds. Place on an ungreased cookie sheet and
bake for 20 to 25 minutes in the preheated oven, until edges are crisp and
slightly browned.
*What
really makes these unusual is the rice crispies which make it fun and
crunchy.
