Artichoke Quiche Babies
Chop
1
can = artichoke hearts, drained, liquid reserved
1 large onion, chopped
Sauté
Onion in artichoke juice
Use Mixer to mix up
8 eggs
3 cups mixed, pre-shredded Italian mix cheese (mozzarella, parmesan, etc)
I like Kraft's version
Parsley
1/4 cup dry bread crumbs
Artichokes
Onion
1 TBS chopped (or fresh) garlic
Spices to your taste – perhaps salt, pepper, paprika
Preheat oven to 325 degrees F. Spray Pam on a mini muffin pan. Fill the
muffin pans approximately 3/4 inch full with the mixture. Bake in the
preheated oven 12 to 15 minutes, until firm and lightly browned. Best
eaten warm, but pretty good cold as well on a party table.
