Shoofly Coffee Cupcakes (on left of platter above)

I first tried this recipe in the form of "Shoofly" Pie at the 1995 Unity Church Maundy Thursday Dinner; it was made by Jean Barber. I still don't know where the name comes from, but the image is very graphic. I changed the recipe some and made the servings smaller since people really like small food items.

Mix & bring to boil.
2 cups boiling water
1 cup baking molasses
1 Tablespoon Baking Soda [must add in before boiling, or the whole thing will volcano all over EVERYTHING]

Combine and set aside 1.5 cups of mixture for topping:
5 cups Flour
2.5 cups dark brown sugar
1.5 cup Cabot butter [always support local companies]

Use a measuring cup to fill cups about 1/3 to 1/2 full in:
Mini paper cupcake cups [available from Hannafords]
In a mini cupcake/muffin pan

Sprinkle topping generously on top. Bake at 325 for 15 minutes. They look and taste kind of like coffee cake, although people often think they are chocolate.

YIELD: About 24 mini cupcakes.
