Shibari Spinach Wee Phyllo Tarts
Ingredients:
1 orange pepper, seeds removed
1 cup crumbled feta cheese
3/4 small box of Neufchatel cheese
5-6 drops Tabasco
3/4 tsp course ground black pepper
1 box frozen spinach, defrosted and pressed to remove excess water
1 egg
2 boxes phyllo pastry cups (don't need to be defrosted)
Put the first six ingredients into a cuisanart and chop until the orange
pepper is liquidified. Add spinach to cuisanart and blend slightly. Taste
and adjust seasonings to taste. When you're done tasting, blend in raw egg
then spoon mixture into pastry cups.
Cook at 350 for about 10 minutes. If you
have leftover filling, add another egg and bake it in a greased decorative
tin to make quiche.
