California Rolls
California rolls or sashimi [vegetable sushi] impress the
heck out of everyone I know. They are the perfect summer appetizer; and so
easy to make!
Cook:
2 cups white sticky rice [yes, it's OK to use Success white rice]
Chop into small chunks:
1 ripe avocado
Unwrap Last:
1 package 8" square "sushi" seaweed [try the co-op]
Place a sheet of seaweed on table. Layer white rice on top about 1/8"
thick over the entire sheet, leaving 1/2" free at the far side for
overlap. Layer one line of avocado nearest yourself and sprinkle with
salt. Roll up tightly "a la jelly roll style". Wet the end to
seal and turn the sealed side down.
Allow to rest 5 minutes or so which seals it together. Slice very gently
in 1/2" rounds and place on a beautiful plate. Impress your audience
by sprinkling something exotic on top like paprika or safflower petals.
YIELD: about 15 California rolls.
VARIATIONS/NOTES: It takes a few times to get it right; and probably best
not to show off to any Japanese friends for a while. Best to eat within 2
days; they start looking a little sad after that.
