Cheese Relish or Tomato Stuffers


Cuisineart:
1 box mushrooms

Cut small on an oriental cut (on the bias)
1 bunch scallions

Add:
1 large container low fat cottage cheese
1 cup ground pre-shredded (fine) extra sharp cheddar or other tangy cheese
Paprika
Salt to taste

Mix together all ingredients.

Tomatoes:
Cut in half 15 Roma or smallish tomatoes. Trim the end of each one so they will sit up straight. Gently scoop out insides with a melon baller. Fill with filling up high, and top with parsley. Serve on a bed of curly Boston lettuce.
