Low Fat Tzatziki Dip -n- Spread

4 Cucumbers
1 large container plain yogurt *Get the simple plain yogurt – nothing fancy

4 TBS Olive Oil
2 TBS White Vinegar
1 TBS Parsley flakes
Salt & pepper & onion powder to taste

Optional:
1 TBS chopped garlic or more to taste

Half the cucumbers longwise. Remove seeds and goop. You may peel them if you wish, but this is optional. Then use the Cuisanart to mulch it all into a mash. Put a colander over a big bowl, put the mash into the colander and let the goop drip down until it's fairly dry. This may take a few hours. Keep refrigerated during this process. It's important to do this otherwise your Tzatziki will be very watery.

Once the cukes are drained, add to the yoghurt along with the spices to taste. Allow to sit for a few hours to overnight for best taste. Serve with bagel chips, bread chunks or crackers. This is a great low fat dip as well.
