Bohemian Curry 

Ingredients:
1 package curry sauce mix - see above is available in mild, medium hot (just right) and HOT!
1 large can Progresso crushed tomatoes
1-2 cups cooked chicken chopped small
1 chopped & sauteed white onion
1 cup +/- water as needed to make it into a smooth, but thick gravy

Saute onion in small pieces. Mix curry mix, tomatoes and water in a thick sauce pan  on a very low flame - it burns easily. Add chicken and onions when sauce is smooth. Remove from heat. Serve separately from pasta or rice because this sauce soaks into the pasta if you leave it on for too long.

*Serve with Nockerel Dumplings which is my special way to serve it, or with rice as you please. You will not need any side dishes as this is very filling. Light blush wine is nice too.

Where I live in Vermont this curry is difficult to find, but it's easy to locate in any urban area. My sister sends this regularly for me and she gets it in the grocery store in New Jersey where she lives. This curry is not just any curry mix - and is quite different from your typical Indian curry. It's a Japanese curry, rich with deep base tomato tones.

My Japanese friend in college who introduced me to this product, also put a few tablespoons of the curry over her eggs the next morning (without the chicken etc. obviously). It's an exciting and unusual flavor.
