Mom's Holiday Goulash
*Serve with Nockerel Dumplings
Slice in Rings and Saute until brown:
1 Large White Onion or 3 Small Yellow Onions
Slice in medium strips and sear on a very high flame:
1.5-2 Lbs chuck or round roast beef
Place in Large pot with :
About three cups water
1 small can tomato paste
1 cup red wine
1/2 the sauteed onions
2 TBS salt
2-3 TBS paprika or more to taste
1 TBS Ginger
Simmer at a very low boil for 3-4 hours, stirring every so often. Add
remaining onions just before serving as the ones you put in earlier will
have cooked down to nothing. This is a wonderful rich and satisfying meal
although very rich.
