Callie's Perky Peppermint Bark

Ingredients
1 Cup Starlight Mints crushed into small pieces
Peppermint extract
1 Bag 12 Ounces White Chocolate Chips
1 Bag 12 Ounces chocolate chips
Two 1" square Paraffin Wax chunks
Wax Paper
Cookie Sheet
Non-stick cooking spray

Place wax paper on a cookie sheet and spray with non-stick cooking spray.

Melt one chunk wax in a heavy duty pot at an extremely low heat (4 on my electric stove). Add white chocolate chips and stir until smooth. Add 1 tsp peppermint extract and most of the cup of crushed mints.

Spread mixture on cookie sheet until thin. Refrigerate until hard, about ˝ hour.

Melt second chunk wax at low heat. Add chocolate chips and stir until smooth. Spread evenly over peppermint layer and refrigerate again.

When cool, break up into uneven pieces by hand. Enjoy!



*Note – you don't have to use the paraffin wax if you don't want to. It makes the chocolate a little harder, a lot shinier and makes it look more professional.
