Carmen Miranda's Caramel Apples

Why a Recipe?
It's true that caramel apples are a pretty basic and very popular autumn staple. They can also be a big sticky mess and a pain in your autumnal behind. Try these tips to make easy and neat caramel apples every time.

Caramel Apples for Grownups
One of the reasons adults often avoid caramel apples is because they are a big sticky mess to bite into. Try cutting them up into slices and eat a neat treat.

The Old Fashioned Way?
When we were kids we unwrapped 100 cubes of caramel for a batch of caramel apples. What a hassle. No more! Purchase a package of Concord Foods Microwave Caramel Apple Kit. I recommend this over the Betty Crocker kit because it costs half as much and tastes better. It's available at Shaws and sometimes Hannafords grocery stores.

Presentation is Everything
Caramel apples make wonderful gifts. Just put them in a cellophane bag with a ribbon and you're set. Cellophane bags are available in the baking section of crafts stores like Michaels. Or put them under glass like I did in the photo above. Consider drizzling them with chocolate for an extra special treat. You can also dip them in chocolate completely, but that tends to overwhelm the apple.

Yes, Follow the Directions on the Box… But also:

  • Don't skip the part about refrigerating the apples first. Room temperature apples don't set the caramel and it slides off.
  • Use four apples instead of six for a better caramel to apple ratio
  • Buy large granny smith apples. Yes they are very tart, but the caramel will balance that out. If you use a sweeter apple the whole thing will be much too sweet.
  • Put the sticks in the bottom of the apple instead of the top. This is because the caramel tends to slide downward, and by having it upside down the extra caramel will pool on the "fatter" end of the apple.
  • Dip the apple into the caramel by holding it sideways and roll the apple without touching the edges. Then hold it up in the air (apple up) for 15 seconds to allow the caramel to harden slightly. Otherwise it will pool under the apple.
  • Once the apples are complete - keep them refrigerated. If left out at room temperature the caramel semi-melts and cements to the plate.
  • Don’t cut them into slices until you're ready to eat them. Granny Smith apples get a bit slippery after about 45 minutes.
