Chewy Caramel Turtles
Two Versions: Way Easy Bars and Fancier Turtles


What you Need:
2 Sticks Butter
Walnuts or Pecans
1 cup Chocolate Chips (Nestles is fine, but if you can, buy higher quality chocolate - see link below for Green River chocolate)
1.5 cups light brown sugar

***Two heaping tablespoons instant coffee (like Folgers) if you like the flavor

For fancier version:
Paraffin wax

Way Easy Bars
Melt in a heavyweight pot:
2 sticks butter (not margarine)

While butter is melting, spray small brownie pan with non-stick cooking spray. Layer bottom with walnuts. *Don't use wax paper – the caramel melts it.

Add 1.5 cups light brown sugar and coffee to butter. Bring to a boil. **use a heat resistant soft spatula to stir if you have one.

Boil for about five minutes STIRRING OFTEN. Seven minutes max or when it starts to smoke slightly. It will be full of air bubbles and look like lava. Be careful as the caramel is extremely hot.

Pour caramel over walnuts. Immediate sprinkle chocolate chips over caramel and cover pan (this melts the chocolate). **"Score" into bars while it's still soft. Allow to cool and eat. Yummy!


Fancier Turtles (for gift giving)

Melt in a heavyweight pot:
2 sticks butter (not margarine)

While butter is melting, spray two cookie sheets with non-stick cooking spray. Arrange walnuts or pecans in little clumps depending on how big you want the turtles to be. Aim for about 24 piles give or take. Leave 1"-2" space between each. *Don't use wax paper – the caramel melts it.

Add 1.5 cups light brown sugar and coffee. Bring to a boil. **use a heat resistant soft spatula for both the caramel and the chocolate.

Boil for about five minutes STIRRING OFTEN. Seven minutes max or when it starts to smoke slightly. It will be full of air bubbles and look like lava. Be careful as the caramel is extremely hot.

While this is happening, melt a small chunk of paraffin wax (about ˝" of a full paraffin block) in another heavyweight pot on a VERY LOW flame. The wax will make the chocolate shiny and a little harder like candy chocolate should be.

Pour a dollop of caramel over each clump of walnuts. It will spread a little bit – less of you let the caramel cool slightly. *Rinse spatula immediately in hot water and dry completely. (needed for chocolate)

As soon as this is done add 1 cup of chocolate chips to the second pot and heat at a VERY LOW flame – 4 on an electric stove. Chocolate burns easily so stir until smooth and shiny.

Then pour a dollop of chocolate or so on each turtle. Put the cookie sheets in the refrigerator to cool before wrapping for the freezer.
