Not Very Quiescent Quesadillas
I first had this appetizer at Miguel's Stowe Away with my friend Alberto
in the summer of 1992, so I associate it with him. It's more of a main
dish though, if you eat two.
DIRECTIONS:
Preheat oven to 350 degrees.
Chop and toss:
2 mild green chilies
1 ripe medium tomato
1 medium white onion
A few shakes of paprika
Lay out:
4 no lard large soft flour tortillas [Price Chopper brand is good]
Layer on one half of each tortilla:
Bottom layer: 1 layer Cabot shredded mozzarella
1 layer Cabot shredded sharp cheddar
Veggies on top
Fold tortilla over and bake carefully until cheese is melted and tortilla
is crispy on top, about 15 minutes. Serve with sour cream on the side.
YIELD: 4-5
VARIATIONS/NOTES: Serve hot. These aren't so great cold.
